Sometimes, all that is required for a delicious dinner is a skillet for a quick saute, and a spoon for tucking a warm savory mixture into warm tortillas. Add some cheese, avocado and sour cream and you’re good to go!
Pre-cooked lentils are a timesaver when it comes to getting dinner on the table. Look for them in the produce section of your local supermarket. If you’re not feeling the lentils, substitute a drained can of black beans. And by all means if you have ground turkey, chicken or beef begging to be used, use it instead of the pork…this will still be delicious!
Pork and Lentil Tacos
Serves 4 to 6
2 tablespoons olive or vegetable oil
1 small white onion, diced
1 pound ground pork (You can also use ground turkey, chicken or beef)
½ teaspoon ground cumin
½ teaspoon dried oregano
¼ cup hot sauce, such as Valentina or Cholula
1 ½ cups cooked lentils
Kosher salt and freshly ground black pepper
Tortillas, grated Monterey jack cheese, lime wedges and sliced avocado, for serving
Heat oil in a skillet over medium-high heat. Add onion and garlic and cook, stirring occasionally, until softened and translucent, about 7 minutes. Add pork to the pan along with the cumin and oregano and cook, breaking up the meat with a spoon or spatula, until the pork is cooked through, about 5 minutes. Stir in hot sauce and lentils and season the mixture with salt and pepper. Serve with tortillas and desired toppings.
